3 Fast and Easy Work-From-Home Meals

For those who haven’t experienced the joys of working from home, this time can be challenging, especially if you have children. It’s sometimes difficult to find time to cook a healthy meal when your job is calling form one side and your child from another, while coronavirus is making it harder for us to find fresh and affordable food options. You shouldn’t be hard on yourself if you cannot choose the healthiest options for yourself and your family, especially during this time. The only thing that’s important is to have any food available and we prepared 3 amazing meals you can make which will satisfy even the pickiest among us. From vegan, vegetarian and meat options  we have it all!



Chicken, bean and cheese tortilla

Chicken, bean and cheese tortilla

Although it has a high-calorie value, this tortilla is an amazing source of both meat-based and plant-based protein. 1 cup of canned beans has an amazing 14 grams of protein keeping you full and giving your body energy to keep your pace. 


What you’ll need:

  • Tortillas
  • 1 large onion
  • 9 oz can of black beans
  • 9 oz can of red beans
  • 9 oz can of corn
  • 1 lb chicken (defrost if frozen)
  • 4-5 slices of cheese of your choosing
  • 16 oz heavy cream
  • Fresh or smoked paprika (spice)
  • Tabasco (if you want it spicier)

Instructions:

  1. In a large pan, put 1,5 tablespoons of oil and add diced onions. Saute for a few minutes until the onions are translucent. 
  2. Add diced chicken and spices and cook until the chicken is cooked through. 
  3. Slowly add the beans, corn and heavy cream and whisk until the cream thickens. 
  4. Once thickened, place in a tortilla, add a slice of cheese and you’re done. 

 

 

Vegan Green Bean Stew

Vegan Green Bean Stew

This recipe is very easy to make and perfect for this time as it doesn’t require almost any fresh ingredients (although all of these can also be used fresh, if possible) but focuses on the frozen ones. Although some nutrients are lost when freezing food, many are still present which makes them a healthy alternative when fresh foods are not available. 

What you’ll need:

  • 1 bag of frozen green beans
  • 1 bag of frozen yellow beans
  • 1 cup lentils
  • 3 carrots
  • 3 large potatoes
  • 1 onion
  • Mixed spices
  • 1 tbs vegetable oil

Additionally, if you eat meat, you can add leftover chicken, pork, etc.


Instructions:

  1. Dice potatoes, carrots, and onion
  2. In a large pot, add all the ingredients (except meat) and add spices to your preferences. 
  3. Add enough water to cover all the ingredients and 1 extra inch on top. 
  4. Cover and cook for at least 60 minutes or until all ingredients are cooked throughout. If needed, add more water. 
  5. Once it’s cooked, add parsley and serve!

 

 

Vegetarian Mushroom Gnocchi

Vegetarian Mushroom Gnocchi

Easy, fast and delicious. This meal is done in less than 30 minutes and is a great choice for the whole family of you’re not a fan of meat. 


What you’ll need:

  • 1 lb frozen gnocchi 
  • 1 lb mushrooms 
  • 16 oz heavy cream
  • Chilly flakes
  • 0.5 cup parmesan cheese
  • 1 medium onion

Instructions:

  1. Dice onion into small pieces. In a large pan, put 1,5 tablespoons of oil and add onions. Saute for a few minutes until translucent. 
  2. While waiting, dice mushrooms and then add to the onions. 
  3. Add a bit of water and saute until mushrooms let go of the water (7-8 minutes). 
  4. Once the water evaporates, add heavy cream, salt, pepper and chilly flakes (if you want it spicy). 
  5.  Whisk until the cream thickens. While waiting, prepare the water and biol the gnocchi as instructed on the packaging. 
  6. Once the gnocchi are done, mix everything together, add parsley, parmesan cheese and serve!
